Baked Lemon Herb Chicken
Ingredients:
- 4 boneless, skinless chicken breasts
- 2 lemons
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
1. Preheat your oven to 425°F (220°C). Lightly grease a baking dish.
2. In a small bowl, zest one lemon and then juice both lemons. Set aside.
3. In another bowl, combine olive oil, minced garlic, dried thyme, rosemary, oregano, salt, and pepper. Mix well.
4. Place the chicken breasts in the greased baking dish. Pour the lemon juice and zest over the chicken.
5. Drizzle the olive oil and herb mixture over the chicken breasts, ensuring they are evenly coated.
6. Place the baking dish in the preheated oven and bake for about 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
7. Remove the chicken from the oven and let it rest for a few minutes. Garnish with fresh parsley.
